Peter Gordon and Connie Clarkson present Hainanese Chicken Rice, Singapore’s classic hawker favourite.

Hainanese Chicken Rice is slow-poached chicken and seasoned rice, with chilli and spring onion sauces, garnished with cucumber – and served with a little wonton soup on the side.

Connie was born and raised in Singapore, before her prominent life in Auckland hospitality, and can’t wait to share how to make this staple of her childhood with you.
